Chiasson Oyster Farm
We’re located in the cold, pristine waters of the Bay of Chaleur. Within an alcove of the Gulf of St-Lawrence, you’ll find the Chiasson Oyster Farm.
There you’ll discover our proudly independent, Acadian rooted Oyster Farm.
Our oysters are wildly grown on a naturally occurring oyster bed found in some of the most northern, and nutrient rich waters. The Chiasson oyster (Crassostrea virginica) thrives in plankton rich waters growing at rates optimal for sustainable farming. Truly a 100% organic product. We harvest the oysters using minimally invasive techniques because we at the Chiasson Oyster Farm want to ensure the oyster bed will survive for endless seasons of harvest.
We harvest and process our oysters in an Health Analysis and Critical Control Points (HACCP) approved plant (Approved by both The United States of America and The Canadian government). There, they are cleaned and graded according to their size. Before packing our oysters for shipment, we rewash them verifying each oyster to ensure their supreme quality. HACCP is a standard to ensure our shellfish are of the highest quality before shipment.
Uniquely green. The large amounts of seabed organic algae give our oysters their unique green shell tint.
Nutritious and delicious, our Chiasson oysters are rich in Alpha Omega-3 fatty acids(delicious fat), protein, vitamin B12, zinc, selenium, iron, copper, magnesium, and phosphorus. Our “wild” oysters are uniquely delishous – smooth, sweet, and long tasting, like the sea.
